Pulled pork and beef brisket are slow roasted indirectly over fruit wood and charcoal overnight at low temperatures for up to 18 hours. Ribs are cooked for about six hours and never boiled. Chicken is the quickest at three hours. Seafoods are also part of our competition menu with first places in salmon the last two years. We are also proud to announce that we again hold the title of the “Canadian CASI (Chili Appreciation Society International) Chili Champion”
We will work with you and your budget to come up with a menu that you will be proud to share with your friends. Whether you just want to pick up a pile of pulled pork from us to serve your own way or have us give you the full-meal-deal of full set up including hot buffet lines with multiple meats, sides of our own slaw, salads, pit baked beans, Texas or homestyle chili, breads and deserts.
